Do you mean period of 16 days and longer? Or do I have to have a visa already for staying only 15 days??

We would like to re-inform that under the new Vietnam Government Decree which takes effect from 1 July 2015, nationals of Germany are exempt for a Vietnam visa within 15 days single entry regardless of passport types and purpose of visit. The must-condition to enjoy the visa free is the new entry date is more than 30 days from the last exiting date in Vietnam. If the time distance is less than 30 days, you still need to nộp đơn xin visa.
Therefore, kindly check if you can enjoy this visa free policy.
